Lemon Butter Fish
This simple fish dish is light, fresh, and full of flavour. Cooked gently in a wide pan, the fish turns golden on the outside while staying soft inside, finished with a warm lemon butter sauce that brings everything together.
Ingredients

Fish fillets – 2 (about 300 g total)

Olive oil – 1 tbsp

Butter – 2 tbsp

Garlic – 2 cloves (chopped)

Lemon juice – 2 tbsp

Salt – 1/2 tsp (adjust to taste)

Black pepper – 1/4 tsp

Fresh herbs – 1 tbsp chopped (optional)
Method

Heat a wide non stick pan over medium heat and add olive oil.

Season the fish with salt and pepper.

Place the fish in the pan and cook until golden on one side.

Flip gently and cook the other side until fully cooked.

Place the fish on a plate.

In the same pan, add butter and garlic and cook gently.

Add lemon juice and mix gently for a few seconds.

Pour the sauce over the fish and serve warm.
