Ingredients

  • Spaghetti – 250 g

  • Olive oil – 3 tbsp

  • Garlic – 4 cloves (thinly sliced or chopped)

  • Dried chilli flakes – 1/2 tsp (or 1 small fresh chilli, sliced)

  • Black pepper – 1/2 tsp

  • Pasta water – 120 ml (save from boiling the spaghetti)

  • Parsley – 2 tbsp chopped (optional)

  3. Add garlic and cook gently until lightly golden.

  4. Add chilli and cook for a few seconds.

  5. Add the cooked spaghetti and the saved pasta water.

  6. Mix gently until the spaghetti is well coated.

  7. Season with black pepper and add more salt only if needed.

  8. Turn off the heat, add parsley if using, and serve warm.

Tips & Serving Ideas

  • Keep the heat low when cooking garlic so it does not burn.

  • Pasta water helps the sauce coat the spaghetti smoothly.

  • Adjust chilli to your taste.
