Spiced Chicken Bites
These spiced chicken bites are crisp on the outside and tender inside, making them perfect for snacking. They cook easily in a non stick pan with a little oil and come together with simple, familiar ingredients.
Ingredients

Chicken breast or thigh – 450 g (cut into bite size pieces)

Yogurt – 120 ml

Garlic – 2 cloves (finely chopped)

Ginger – 1 tsp (grated)

Paprika – 1 tsp

Chilli powder or chilli flakes – 1/2 tsp (adjust to taste)

Salt – 1 tsp (adjust to taste)

Black pepper – 1/2 tsp

Lemon juice – 1 tbsp

Oil – 1 tbsp

Fresh parsley – 1 tbsp chopped (optional)
Method

In a bowl, mix yogurt, garlic, ginger, paprika, chilli, salt, pepper, and lemon juice.

Add chicken pieces and mix well to coat.

Leave for a short while so the flavours soak in.

Heat a non-stick pan over medium heat and add oil.

Add the chicken in a single layer.

Cook, turning gently, until lightly browned on the outside and fully cooked inside.

Leave it for a minute, then serve warm.
