Chicken and Tomato Pasta

This hearty chicken and tomato pasta is cooked in a single pan, making it easy and satisfying. Prepared gently in a wide pasta pan, the chicken stays tender while the tomato sauce coats the pasta evenly, creating a comforting meal for any day.

Ingredients

  • Pasta – 250 g

  • Chicken pieces – 450 g (cut into small pieces)

  • Onion – 1 small (chopped)

  • Garlic – 3 cloves (chopped)

  • Tomato sauce – 480 ml (or canned diced tomatoes – 400 g)

  • Olive oil – 2 tbsp

  • Water or stock – 600 ml (add a little more if needed)

  • Salt – 1 tsp (adjust to taste)

  • Black pepper – 1/2 tsp

Method

  1. Heat a BE LIVING Pasta Pan over medium heat and add olive oil.

  2. Add chicken pieces and cook until lightly golden.

  3. Add onion and garlic and cook until soft.

  4. Add tomato sauce (or diced tomatoes) and stir well.

  5. Add pasta and water or stock. Stir.

  6. Cook until the pasta is tender and the sauce thickens, stirring occasionally.

  7. Season with salt and black pepper.

  8. Serve warm.
