These classic crepes are thin, soft, and lightly golden, filled with fresh fruit and whipped cream. Cooked gently on a non stick pan, they make a light and sweet treat that feels fresh and easy to enjoy.

Ingredients

  • 1 cup flour

  • 2 eggs

  • 1 1/2 cups milk

  • 1 tbsp sugar

  • 1/4 tsp salt

  • 2 tbsp melted butter

  • 1 tsp vanilla (optional)

  • 1 cup fresh fruit (strawberries, blueberries, or bananas)

  • Whipped cream (as needed)

Method

  1. In a bowl, mix flour, sugar, and salt.

  2. Add eggs and half the milk. Mix until smooth.

  3. Add the rest of the milk, then mix in melted butter and vanilla if using.

  4. Heat a non-stick pan over low to medium heat and lightly grease it.

  5. Pour about 1/4 cup of the mixture into the pan and swirl to make a thin layer.

  6. Cook until the edges lift slightly and the bottom looks lightly golden.

  7. Flip gently and cook the other side for a few seconds.

  8. Fill with fruit, add whipped cream, fold, and serve.
