Classic Crepes with Fruit and Cream

Ingredients

1 cup flour

2 eggs

1 1/2 cups milk

1 tbsp sugar

1/4 tsp salt

2 tbsp melted butter

1 tsp vanilla (optional)

1 cup fresh fruit (strawberries, blueberries, or bananas)

Method

In a bowl, mix flour, sugar, and salt.

Add eggs and half the milk. Mix until smooth.

Add the rest of the milk, then mix in melted butter and vanilla if using.

Heat a non-stick pan over low to medium heat and lightly grease it.

Pour about 1/4 cup of the mixture into the pan and swirl to make a thin layer.

Cook until the edges lift slightly and the bottom looks lightly golden.

Flip gently and cook the other side for a few seconds.
