Vegetable Omelette with Herbs
This simple vegetable omelette is light, fresh, and full of flavour. Cooked gently in a non stick pan, it combines soft eggs, colourful vegetables, and fresh herbs for a balanced and satisfying breakfast.
Ingredients

Eggs – 3

Onion – 1/4 cup (chopped)

Bell pepper – 1/4 cup (chopped)

Tomato – 1/4 cup (chopped)

Spinach or leafy greens – 1/2 cup

Fresh herbs (parsley, coriander, or chives) – 1 tbsp (chopped)

Olive oil or butter – 1 tbsp

Salt – 1/4 tsp (adjust to taste)

Black pepper – 1/4 tsp
Method

Crack the eggs into a bowl, add salt and pepper, and whisk well.

Heat a non stick pan over low to medium heat and add oil or butter.

Add onion and cook until soft.

Add bell pepper and tomato and cook briefly.

Add spinach and let it wilt.

Pour in the eggs and spread evenly.
